About the journal
Aims and scope
Food Nutrition is an international journal with emphasis on nutrition and policy aspects of food. Food Nutrition provides a unique communication platform for food scientists, nutritionists, microbiologists, medical professionals, and other food-related practitioners to publish works related to food nutrition and its development policies. Production technologies, absorption, bioavailability, and personalized nutrition with consideration of gut microbiota are of particular interest to the journal. The journal focuses on food, its (micro)constituents and their relation to health and/or nutrition by describing (the):
• Food Composition and Structure
• Digestive Characteristics of Food Components
• Microbiota and Human Health
• Toxicological Evaluation of Food Components
• Nutritional Characteristics and Toxicology of Novel Food Resources
• The Relationship between Food Components and age-related Diseases (e.g., Diabetes, Obesity)
• Development and Assessment of Food Nutrition Policy
Examples of topics that are of (special) interest to be published in Food Nutrition are:
• Relationship between Gut Microbiota, Food Digestion, and Human Nutrition
• Relationship between the Physical Properties/Structure of Food and Nutrition and Health, for example, Nutrient Release and Uptake
• In vitro, In-vivo Animal or/and Human Clinical Study of Bioactive Food Constituents Adopting, Genomic, Chemical, Biochemical Technologies
• Nutritional and Metabolic Characteristics of Plant Bioactive Components
• Effects of Processing (including Nanotechnology) to Enhance the Functionality of Bioactive Food Components
• Sport Nutrition and Personalized Nutrition
• Policy for Nutrition and Health Aspects of Food Systems
• Policy for Food Safety and Quality Assurance
Contributions falling into the following categories will be considered for publication:
• Regular Papers: Original high-quality research papers.
• Review Papers: Authors interested in writing review articles for Food Nutrition.
Peer review
This journal follows a review process. Your submission will initially be assessed by our editors to determine suitability for publication in this journal. If your submission is deemed suitable, it will typically be sent to a minimum of for an independent expert assessment of the scientific quality. The decision as to whether your article is accepted or rejected will be taken by our editors.

Any such submissions will be subject to the journal's usual procedures and peer review will be handled independently of the editor involved and their research group. Read more about editor duties.
Authors may submit a formal appeal request to the editorial decision, provided it meets all the requirements and follows the procedure outlined in Elsevier’s Appeal Policy. Only one appeal per submission will be considered and the appeal decision will be final.
Special issues and article collections
The peer review process for special issues and article collections follows the same process as outlined above for regular submissions, except, a guest editor may send the submissions out to the reviewers and may recommend a decision to the journal editor. The journal editor oversees the peer review process of all special issues and article collections to ensure the high standards of publishing ethics and responsiveness are respected and is responsible for the final decision regarding acceptance or rejection of articles.
