INSTRUCTIONS FOR AUTHORS

Acta Alimentaria publishes original research papers, review articles (from invited authors only), preliminary communications, book reviews, and announcements in the field of food science. Papers are accepted on the understanding that they have not been published or submitted for publication elsewhere and that they are subject to peer review. Papers accepted for publication by the editorial board are subject to editorial revision.

Acta Alimentaria follows open peer review. Decisions are brought based on the opinion of at least two independent reviewers, but in certain cases three opinions will be requested, and seldom one review will be sufficient.

A pdf copy of the License Agreement will be sent to authors of papers accepted for publication.

Manuscripts will be processed only after receiving the signed copy of the agreement, preferably by e-mail.

Permissions: It is the responsibility of the author to obtain written permission for quotations, and for the reprinting of illustrations or tables.

Ethics. Akad emiai Kiad o follows the guidelines in the COPE Code of Conduct for Journal Editors as well as the Code of Conduct for Journal Publishers. All authors are expected to be aware and follow the Ethical Guide of Akad emiai Kiad o, conform to the highest standards of ethical conduct in the submission of accurate data, acknowledging the work of others, and divulging potential conflicts of interests.

Authorship. All persons designated as authors should qualify for authorship. Each author should have participated sufficiently in the work to take public responsibility for the content. The corresponding author affirms that he or she had access to all data from the study, both what is reported and what is unreported, and also that he or she had complete freedom to direct its analysis and its reporting, without influence from the sponsors. The corresponding author also affirms that there was no editorial direction or censorship from the sponsors. Preparation of drafts of manuscripts by employees of the sponsor who are not listed as authors is expressly prohibited.

Submission of manuscripts. Acta Alimentaria prefers electronic submission of manuscripts.

Manuscripts should be submitted at https://www.editorialmanager.com/aalim

Presentation of manuscripts

Manuscripts should be written in clear, concise, and grammatically correct English. The file should be submitted in standard Word format, typed double-spaced, with normal margins, maximum 20,000 characters with spaces, including tables, figure captions and references, too, letter type Times New Roman, 12 points size. The order should be as follows: title, abstract, keywords, text, acknowledgements, references, tables, figure captions, figures.

Title. The title should be concise and informative, not exceeding 20 words.

This is followed by the initial(s) of first name(s) and full surname of the author(s) and the name(s) of the institution(s) the author(s) work(s) at.

The affiliation should be marked with numbers, e.g.

V. Cser ep1p , Z. Kati1 and T. Okos2 , 1

Department of Chemistry, Faculty of Chemical Engineering, Technical University, Great Street 1, Zip code City. Country 2

Food Research Institute, Small street 2, Zip code City. Country

The corresponding author should be marked with an asterisk, and phone, fax number (if available) and e-mail address are to be given in the footnote of the 1st page, as follows:

Abstract should not exceed 200 words. Keywords should not exceed 6.

Text. References in the text should be cited by names. In case of two authors, in text: Smith and Low (2000), if in brackets: (Smith and Low 2000). In case of more than two authors, in text: Smith et al. (2004); if in brackets: (Smith et al., 2004).

The article should be divided into the following parts: Abstract and keywords;

1. INTRODUCTION (without titles);

2. MATERIALS AND METHODS (do not describe known methods in detail, refer to their source). Subtitles in decimal system (i.e. 2.1., 2.2. and 2.2.1. etc.);

3. RESULTS AND DISCUSSION. Results can also be subtitled as above. Results should be concise, pointing at the trends (do not repeat numerical results shown in figures and tables). The findings should be discussed here, in comparison to results of others;

4. CONCLUSIONS. Should be short and concise, pointing at the most important findings and the outlook.

REFERENCES. The number of references should not exceed 25 in an original research paper, and 50 in a review paper. The reference list (References) should be in alphabetical order. See examples below:
